Bio

Paolo Malfassi is the founder of GianGusto and partner of Leonardo Bagnoli, with whom he shares a 30-year friendship and a complementary entrepreneurial vision.

After his studies in economics and a great passion for F&B, in 1997 he began his 'apprenticeship' in the management of a provincial bar, where he immediately realised how the market was changing along with his profit and loss account: the consumer was paying more and more attention to quality, craftsmanship and product identity. From this awareness, the first piadina workshop was established in Concesio (BS) in 2003.

They involved Leonardo, already active with the family business, to develop an exclusive handmade piadina base. After months of testing, they develop a stable, high quality product: the franchising project is born.

With "L'Altra Piadineria" they build an expanding network, from Florence to Rome, bringing a distinctive format to the market. In 2011, they decided to separate the retail business, which took the name GianGusto, from the B2B channel, maintained under the historical brand name.

Today, GianGusto is a solid brand with a clear identity and a scalable business model designed for national and international growth.
