Danilo Gasparrini is a restaurant & hospitality executive with over twenty years of experience between Italy and the UK. After managerial beginnings in multinationals in London (Pegasus Solutions and Columbus Insurance), he led the birth and growth of Bun Burgers, a premium fast-casual chain founded in Milan and now with 27 outlets.
Today he is founder of Salty Consulting, an advisory firm that supports high-end restaurant and hotel groups on growth, multi-site operations, P&L control, food cost and F&B optimisation, with a strictly data-driven approach. He integrates AI as an operational lever: demand and cover forecasting, menu engineering, pricing and promotions, purchasing and staff scheduling, margin control - linking POS, CRM and analytics for real-time decisions.
Its innovation is 360°: technology, processes, format and experience. He acts as a bridge between traditional hospitality culture and new digital models: operational standards, KPIs and training on the one hand; delivery, loyalty, CRM and omnichannel customer journey on the other.
